5 Veg Bolognese
Bolognese is a great way to pack a whole lot of veggies into one meal and is something I always have in the freezer as it’s fantastic for quick and easy but very nutritious meals. This one is perfect for babies and provides a good source of iron, but will also be loved by the whole family.

Ingredients
1 tbsp extra virgin olive oil
1 onion
1 garlic clove
500 g beef mince
1 tbsp no added salt tomato paste
400 g tinned chopped tomatoes (no added salt)
1/2 cup mushrooms
1 cup salt reduced beef stock
1 cup water
1/2 apple, grated
1 tsp dried mixed herbs
Risoni or other small pasta, to serve
Method
1. Peel and dice onions. Mince garlic. Finely chop mushrooms
2. Heat oil in a large frying pan over medium heat. Saute onion for 3-4 minutes or until soft and translucent
3. Add beef and garlic and cook for a further 2-3 minutes or until browned
4. Add tomato paste, tomatoes, mushrooms, stock, water, apple and herbs and simmer over low heat for 45 minutes or until sauce is reduced
5. Meanwhile, cook pasta according to packet directions
6. Stir sauce through pasta. Blend if required
