Green Mac ‘n’ Cheese
Suitable from 6 months (once cow’s milk and wheat have been introduced)

Ingredients
Makes 4 1/2 cups
1 cup macaroni or other small pasta
50g butter
1/3 cup flour
2 1/2 cups milk
100g frozen spinach, defrosted
2 cups grated cheese
Method
1. Boil pasta in a large saucepan of boiling water for 8 minutes or according to directions on the pack
2. While pasta is cooking, melt the butter in another saucepan and once melted, stir in flour until it forms a thick paste
3. Whisk in 1/3 of the milk, once combined, whisk in remaining milk and cook, stirring, until mixture becomes thick (2-3 minutes)
4. Stir through spinach and cheese and stir until cheese is melted.
5. Drain pasta and stir through sauce (if you wanting a smoother sauce, blend using a stick blender before adding to pasta)
