Chicken and Veggie Meatballs

These chicken and veggie meatballs are packed with veg but super tasty.

They make a great finger food for little ones and can also be made into a family meal with some pasta and a tomato sauce.

Suitable for freezing

Suitable from 6 months (once almonds, egg and cow’s milk have been introduced separately)


Ingredients

500 g chicken mince

½ cup almond meal

1 egg, lightly beaten

2 spring onions, very finely chopped

1 clove garlic, minced

1 small carrot, finely grated

1 small apple, grated

1 tbsp fresh herbs, finely chopped

¼ parmesan cheese (optional)


Method

1. Preheat oven to 200C
2. Mix all ingredients together in a large bowl until well combined

3. Form large tablespoonfuls of mixture into balls (using wet hands helps to stop the mixture from sticking) and place on an oiled oven tray

4. Bake for 15 minutes or until cooked through
