This delicious, mild chicken curry is a great way to introduce babies and kids to curry - and takes only 20 minutes to make!

Ingredients

1 tbsp extra virgin olive oil

1 onion, cut into wedges

500 g chicken thighs, sliced

1 tsp ground turmeric

1 clove garlic, crushed

1 tsp ground cumin

1 tomato, diced

2 tbsp no added salt tomato paste

270 ml coconut milk

2 cups baby spinach

1/4 tsp salt (optional)

1/2 tsp brown sugar (optional)

Cooked white or brown rice, to serve


Method

1. Heat oil in a large frying pan or wok. Sauté onion for 2-3 minutes or until soft. Add chicken, turmeric and garlic and cook until chicken is browned

2. Add cumin, tomato and tomato paste and cook for a further 2-3 minutes

3. Stir through coconut milk, baby spinach, salt and sugar (if using) and simmer for 4-5 minutes or until sauce thickens slightly. Serve with rice and blend if required
