Pumpkin and Red Lentil Dhal

This delicious pumpkin and red lentil dhal is a great way to introduce your baby to some mild spices (because babies love flavour too!), while also giving them all important iron thanks to the red lentils.

Pumpkin and Red Lentil Puree

Prep Time: 10 minutes
Cooking Time: 20 minutes

Makes: 3 cups
Suitable for freezing

Suitable from 6 months (or whenever your baby starts solids)


Ingredients

1 tsp ground cumin

1/4 tsp ground coriander

250g pumpkin, roughly chopped

1/2 cup red lentils

1 cup salt reduced chicken or vegetable stock

1 1/2 cups water


Method

1. Peel pumpkin and chop into 2cm chunks

2. Place all ingredients in a large saucepan and simmer over medium heat for 20 minutes or until pumpkin is very soft

3. Blend using a stick blender or in food processor until smooth (alternatively, mash well with a fork)

Tip: Any leftover puree can be turned into a delicious soup by adding stock and a little coconut milk.
