Banana, Blueberry and Chia Muffins

These banana, blueberry and chia muffins are a nutritious snack for little ones (and big ones!). They’re sweetened with the natural sweetness of banana so have no added sugar.

Makes: 24 mini muffins
Suitable for freezing

Suitable from 6 months (once egg, cow’s milk and wheat have been introduced separately)


Ingredients

2 very ripe bananas

1 egg

50 g butter, melted

1/4 cup natural yoghurt

3/4 cup wholemeal flour

1 tsp baking powder

1/2 tsp mixed spice

1/3 cup blueberries

2 tsp chia seeds


Method

1. Preheat oven to 180C

2. Mash bananas. Mix with egg, butter and yoghurt

3. In a separate bowl, mix together flour, baking powder and mixed spice. Make a well in the centre and pour in banana mixture. Mix until just combined

4. Gently fold through blueberries and chia seeds

5. Spoon into greased mini muffin pan and bake for 10 minutes or until golden on top

6. Allow to cool for a few minutes, then transfer to a wire rack to cool completely
