Pea and Mint Fritters
Suitable from 6 months (once egg, milk and wheat have been introduced separately)

Ingredients
1 cup frozen peas, defrosted in boiling water and drained
1/3 cup wholemeal flour
1/2 cup baking powder
1 egg
2 tsp milk
1 tsp grated lemon rind
1/2 tbsp mint leaves
1/2 cup grated cheese
2 tsp butter
Method
1. Place peas in food processor and process until chunky. Add egg, milk, lemon rind, mint and cheese and process until combined
2. Place flour and baking powder in a bowl and make a well in the centre. Add pea mixture and stir until smooth
3. Heat 1 teaspoon of butter in a large frying pan over medium heat. Cook tablespoonfuls of mixture in batches until bubbles form on top
4. Then flip and cook for a further 20-30 seconds on other side
5. Serve plain or spread with cream cheese, avocado or hummus
