Oat and Banana Pikelets

These oat and banana pikelets (or pancakes, depending on where you’re from!) are sweetened with banana so they don't need any sugar. They're also full of fibre, so they’re perfect for filling up little tummies!

Great for breakfast or snacks, serve them plain, with some fruit puree or peanut butter.⁠

Suitable from 6 months (once cow’s milk, wheat and egg have been introduced separately)


Ingredients

1 large very ripe banana

½ cup milk

1 egg

½ cup rolled oats

½ cup wholemeal flour

1 tsp baking powder

1 pinch cinnamon

1 tsp butter


Method

1. Mash banana in a medium sized bowl and stir through milk and egg

2. Fold through oats, flour, baking powder and cinnamon

3. Heat butter in large fry pan over medium heat. Place small spoonfuls of mixture into pan and cook until surface starts to bubble

4. Flip and cook for a further 20 seconds on other side

5. Serve plain, lightly buttered, or with fruit puree
