Pumpkin, Chickpea and Quinoa

This combination isn’t only delicious, it’s also incredibly nutritious and provides a source of iron thanks to the quinoa and chickpeas. The addition of some mild spices makes it even more delicious and helps to introduce your baby to new flavours.

Quinoa, chickpea and pumpkin puree

Cooking Time: 30 minutes

Makes: 3 cups
Suitable for freezing

Ingredients

1 cup quinoa, rinsed well

500g pumpkin

400g tin chickpeas, rinsed and drained

1 tsp ground coriander

2 tsp fresh coriander (optional)


Method

1. Place quinoa in a large saucepan and cover with 3 cups water. Boil for 15 minutes or until soft. Drain and rinse well

2. Meanwhile, peel pumpkin and cut into small chunks. Steam for 10-15 minutes or until soft (you can steam the pumpkin over the quinoa if it makes life easier). Alternatively, steam in microwave on high for 4 minutes

3. Place cooked quinoa and pumpkin in food processor along with chickpeas and coriander and blend to a thick puree (add a little water if needed)
