Sweet Potato Shepherd’s Pie
This delicious shepherd’s pie for babies is rich in iron and packed with veggies and the addition of sweet potato instead of potato adds a little extra sweetness that babies love. It’s quick and easy and makes a great meal for the whole family.

Ingredients
1 onion, finely sliced
500g lamb mince
1 clove of garlic, minced
1 stick celery, finely diced
1 carrot, peeled and grated
1 zucchini, grated
2 tbsp no added salt tomato paste
1 cup salt reduced beef stock
2 tsp Worcestershire sauce (optional, may contain fish)
1 tsp dried rosemary
2 large sweet potatoes, peeled and roughly chopped
1 tbsp butter
1/2 cup milk
Method
1. Heat oil in a large saucepan or frying pan over medium heat. Sauté onion for 3-4 minutes until soft. Add lamb and garlic and cook for a 2-3 minutes or until lamb is browned
2. Add celery, carrot, zucchini, tomato paste, stock, Worcestershire sauce and rosemary and simmer for 20 minutes or until some of the liquid has evaporated and sauce is thick
3. Meanwhile, steam sweet potato for 10 minutes or until very soft. Transfer to a large bowl and mash using a potato masher or fork. Stir through butter until melted, then stir through milk
4. Transfer lamb to a large greased oven dish. Spoon sweet potato over top and spread evenly using the back of a spoon or fork
5. Pie can now be blended or alternatively, bake in a moderate oven for 20 minutes or until top is brown and crisp
